Peanut Sauce

This is a great recipe for vegetables, pasta, rice, and could be used as a dipping sauce. It's delicious!

Peanut Sauce

1 cup smooth peanut butter
2-3 tbsp honey
3/4 cup hot water
1/4 cup cilantro, finely chopped
2 tablespoons soy sauce
2 teaspoons cider vinegar
2-3 tbsp honey
2 cloves garlic, minced
pinch cayenne pepper
Salt and black pepper for taste

Whisk peanut butter, honey and hot water in bowl. Stir in remaining ingredients. Season with salt. Serve in bowl for dipping or use as sauce with vegetables and rice.
Enjoy!

Homeade Pesto

Homeade Pesto:

1/4 cup pine nuts
3 medium garlic cloves, finely minced
3 cups packed basil leaves
6-7 tbsp olive oil
1/4 cup freshly grated parmesan cheese

Toast the nuts in a heavy skillet over medium heat, stirring frequently, for 4-5 minutes. Transfer to a plate.

Finely chop the packed basil leaves and place into a food processor (or blender) with the nuts and garlic. Begin processing the basil mixture, slowly adding the olive oil one tablespoon at a time until all is combined. You made need to stop when necessary to scrape down the sides of the bowl.

Transfer to a small powl and stir in the parmesan cheese. Adjust the salt to taste.

Love,
Lynn
